Must Winebar; Cool For Cats Summer Cocktail Session

Disclaimer: I was a guest of Must Winebar, who kindly served us cocktails to share, food to sample and a small sample bottle of Sipsmith gin to take home to enjoy.


There is only one way to handle a 40C day in Perth, and that’s to kick back and sip cocktails. Must Winebar invited a handful of us cats in out of the heat to launch a new summer menu using Sipsmith spirits, a distillery from London.

We start off politely, following the protocol of taking a straw sample of the cocktail.

The Ghost of Mr. Smith: Sipsmith gin, champagne, bitters and peach liqueur, that reminded me of a light summer version of mulled wine.

But we couldn’t get enough out of the cocktail, so a few of us just shared a cocktail, sipping and passing it on. Perhaps this is the real joy of the cocktail. The perfect blend of the flavours gets you to a certain point, but it’s the familiarity, the chitchatting and the laughter that makes it so much more enjoyable.

Ginuary, one of my favourites. A combination of Sipsmith Gin, St Germain Elderflower Liqueur, Fresh Apple Juice and Bitters, topped up with Ginger Beer.cocktail3


Now, I didn’t have much to drink, but…. remind me which cocktail this was? Either way, it was refreshing.


A Spicy Prawn Gazpacho Shot


‘Must’ Fish and Frites (and the garlic chive dip that went with it, really was a must)


Rusty’s Ribs. I took these on in a white skirt and won! No sauce drips :)


Threesome; a trio of Sipsmith Gin, Vodka and Damson Vodka with Plum Bitters.


The smoky negroni was an impressive combination that was reminiscent of a original 18th gentlemen’s club. Smoky and sophisticated.

We finished off sipping the official drink of summer, the sangria before heading back out (an adorable sample Sipsmith gin sample in tow) to face the heat head on.
